The Healing Power of Thankfulness: 2 Scrumptious Recipes!

This Thursday, the 22nd of November is Thanksgiving in the United States.

If you live in Oz or NZ you’ve probably never experienced a traditional thanksgiving dinner.  My first one just a couple of years ago was roasted turkey, roasted vegetables and a choice of three desserts, pumpkin pie, berry pie and apple pie!

Today I want to share two unique Thanksgiving recipes with you.  The first is a recipe for happiness.  The second is my twist on the traditional thanksgiving dessert, Pumpkin Pie.

They’re both yummy and have lots of goodness for you!

Wherever you are right now, just stop for a moment.  Take a step back and think about where you are today in the bigger picture of your life.   I bet if you think back, no matter how you might be feeling today – you’ve survived some incredibly challenging and even dark times.

It’s a strange phenomenon.

But after coming through dark times like that, it’s so easy forget how incredible it was to be  free of the suffering. Gradually the lesser inconsequential challenges become an irritation, a source of frustration, anger or sadness – when really, in the bigger picture of life, they are just a hiccup in our happiness.

When I noticed this in my own life I started making changes. 

For example, some of you may know I was a chronic asthmatic as child. I missed a lot of school from being sick or in hospital and I almost died in intensive care once.   Miraculously, as an adult, the asthma virtually disappeared and I came off all medication.

But while traveling alone in remote Mexico, I fell very sick for the first time in 20 years.  I had to sleep sitting up because I couldn’t breathe lying down, I had no medication, no doctors and no one to help me.  I started having flashbacks to the asthma attacks of my childhood and the fear ran so deep I was practically paralyzed. Not knowing if you’ll be able to take your next breath is not a nice place to be.

I remember thinking….

“I am always going to remind myself of how this feels right now, and be thankful for my health, for being able to sleep laying down, for being able to take my next breath freely, for being able to live my life normally without this fear and suffering”.  

And to this day, I do remember, and regularly give thanks for my health and every physical blessing that I have.

Today you can instantly get rid of a ton of bad feelings….

Like resentment, jealousy, frustration, anger or sadness – just by taking a moment to be grateful.   Start by remembering the things you once thought you’d lost and now have regained.

Practical ways for being thankful are:

  • Just say it: tell yourself or someone how thankful you are, be specific.

  • Write it: make a list of all the special moments in this past year

  • Mediate on it: focus your mind and let it wander in thankful thoughts

  • Pray about it: open up your spirit and give thanks

  • Symbolize it: a simple act can be a very powerful reminder

  • Celebrate it: with Thanksgiving!

I guarantee you’ll sleep better tonight and wake up tomorrow with a new sense of energy and purpose.

So, now the sermon is over lol, now here’s the dessert!

Sweet Potato Pie with Roasted Pecan Topping – Serves 10



  • ¾ cup quinoa flour
  • ½ cup coconut flour
  • Pinch salt
  • 1 teaspoon of powdered Stevia
  • ½ cup coconut oil
  • 2 tablespoons ice water, plus more if needed


  • 2 cups of sweet potato puree
  • Pinch salt
  • 3 eggs & 1 egg white
  • Stevia to taste
  • ½ cup low fat sour cream
  • ½ cup low fat yoghurt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • 1 egg white, lightly beaten


  • ½ cup pecans
  • 2 ounces (60 grams) fresh cranberries


To make the pastry:

Combine the flours, salt and Stevia in a large mixing bowl. Add the coconut oil and mix with a pastry blender or rub with your fingertips until the mixture resembles coarse crumbs. Pour in the ice water and work it in to bind the dough until it holds together well without being too sticky.  Make a ball with the dough, wrap it in plastic, and refrigerate it for at an hour. Sprinkle the counter and a rolling pin lightly with flour. Roll the dough into a 10-inch circle. Carefully roll it up onto the pin and lay it inside a 9-inch pie pan. Press the dough into the bottom and sides so it fits tightly. Trim the excess dough around the rim and pinch the edges to form a border. Refrigerate until ready to fill.

To make the pie:

Heat the oven to 190°C (375°F). Place the sweet potato puree into a bowl. In another bowl beat the eggs & 1 egg white until light and frothy.  Add to the puree and whisk well. Add the sour cream, yoghurt, cinnamon, nutmeg and Stevia and mix well. Pour into the pie shell; brush the pastry with a little egg white. Lower the oven temperature to 160°C (320°F) and bake until the pie is set (approximately 45 minutes). Remove from the oven and cool.

To make the topping:

Finely chop the pecans and roast in a large non-stick pan over medium heat for 5-8 minutes stirring constantly.  Finely dice the cranberries and mix together with the pecans. Sprinkle the topping evenly over the cooled pie and serve.

Per Serving: Calories: 231.8, Protein 6.1g

Hi Belinda. Wow, as always you are so inspiring. The last 18 months have been hard for me, challenging, my life has changed in so many ways. I have grown, become stronger and a much better person. When I look back I have so much to be thankful for. My list would be pages long. Life is a blessing. Sometimes it just takes somebody to remind you of that fact. Thank you. Jodi :)

Hi Jodi, thank you – I do write from my heart and also follow my intuition on what people really need to hear. Sometimes I know there’s someone out there I am writing for…maybe today that was you!

Challenges that go beyond a few months are tough, 18 months is long. It sounds like you have come out the other side and now are able to acknowledge the good that’s come out of it.

Fortunately, or unfortunately (as the Japanese always used to say when I worked for them), challenges are one of the ingredients to becoming stronger and a much better person. A part of me wishes there was an easier way..but on the other hand, that’s what makes you value your personal growth even more and sets you apart from average. Thanks for posting and sending you good vibes for 2013 – a better year for you!
